  5. Crumble up some cheese into the risotto, and stir through till melted. Check seasoning..

In a large saucepan, bring broth and water to a simmer; keep hot. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. In a medium saucepan over medium heat, bring chicken broth to a simmer. In a large pot or Dutch oven, heat oil. Place the chicken back into the pan, and add a ladle of stock and stir until the rice absorbs all the liquid.
