To begin with this particular recipe, we have to prepare a few ingredients. You can cook veg dum biryani using 26 ingredients and 5 steps. Here is how you cook that.

Composition for Veg dum Biryani:

  1. Give 1 glass for basmati rice.
  2. Give 3/4 cup curd.
  3. Give 1 Potato cut into cubes.
  4. Need 1 - carrot cut into cubes.
  5. Give 1/2 cup - cauliflower.
  6. Need 1/2 cup - peas.
  7. Provide 10-12 cubes paneer.
  8. Provide Few - Mix dry fruits.
  9. Require As required - Kesar soaked in water.
  10. Give 1.5 tsp of Biryani masala.
  11. Need 2 tsp of Red chilli powder.
  12. Prepare 1/4 tsp of turmeric powder.
  13. Require 1 tsp coriander powder.
  14. Prepare 2-3 green chillies chopped.
  15. Require Handful - Coriander leaves chopped.
  16. Give handful of Mint leaves chopped.
  17. Provide as required for Brown onions.
  18. Require 2 - onions thinly sliced.
  19. You need 1-2 tsp - Ginger garlic paste.
  20. Provide 2 of tomatoes roughly chopped.
  21. Prepare 3-4 tbsp ghee.
  22. Need 2-3 for cloves.
  23. Need 3-4 - elaichi.
  24. Give 1 inch dalchini.
  25. Prepare 1 for bay leaf.
  26. Require as per taste - Salt.

This recipe was shared to me by a Muslim friend who makes the most awesome Biryani that I have tasted. The recipe of Hyderabadi Biryani has a few stages to making it. I make it in many different ways and the one mentioned below is one of the methods to make it super delicious. Veggies: so traditionally meat is used in biryani but since we are making veg biryani, we are using assorted vegetables here.





Veg dum Biryani making:

  1. Take a mixing bowl and add curd to it whisk it to make it smooth and then add turmeric powder, coriander powder, ginger garlic paste, red chilli powder, biryani masala and salt in it. Mix it properly and then add all the veggies except paneer in it. Add coriander leaves and brown onions in it. Mix dry fruits in it and keep it aside for 15-20 mins..
  2. Now wash the rice. Cook rice add salt while cooking rice. Fry the paneer pcs in ghee..
  3. After 15 mins take a kadhai and add 3 tbsp ghee in it and 2 tsp oil in it. Once hot add tejpatta, laung, elaichi, dalchini in it. Once done add all the marinated vegetables in cook. Cook it for 5 mins. Sim the flame of gas and cover it for the next 15-20 mins till the masala is done. Keep stirring in between. Finally, add fried paneer pcs in it and mix it..
  4. Once the masala is done take out the half masala in a plate and put a layer of cooked rice on the top. Add a tsp of ghee kesar water, sprinkle biryani masala, coriander leaves mint leaves and fried onions on it then again spread a layer of vegetables and top it with rice and spread ghee,kesar water, biryani masala,. Coriander leaves, mint leaves and fried onions on it and cover it and seal it with aata and cook for few mins in sim flame..
  5. Since whatever we have added is already cooked so we don't need to cook for a long time just a few mins then switch off the gas and let it be like that only for 5 -10 mins after that u can serve it with raita or any curry..

I have used potato, cauliflower, beans and carrots. You can use green peas, mushrooms or even paneer would be a good addition. Spices: aromatic and exotic spices (both whole and ground) are a must for a good biryani. This veg biryani can be made in a regular pot, traditional pressure cooker or even in a Instant pot. This recipe is one that's made at home time and again for years.
