Composition of Veg dum biryani:

  2. Require 100 gm Peas.

  22. You need 1/4 tbs of Garam masala.
  23. Give 1/2 tbs Red chilli powder.
  24. Need 1 tbs Deggi mirch.
  25. Need 1 tbs of Garlic ginger paste.
  26. Require 2 for Green chilli finely chopped.
  27. Provide 1 spoon Kasuri methi.
  28. Need as required for Mint.

This recipe was shared to me by a Muslim friend who makes the most awesome Biryani that I have tasted. The recipe of Hyderabadi Biryani has a few stages to making it. I make it in many different ways and the one mentioned below is one of the methods to make it super delicious. Veggies: so traditionally meat is used in biryani but since we are making veg biryani, we are using assorted vegetables here.





Veg dum biryani step by step:

  1. Soak rice in a bowl for half an hour.
  2. For barista take onion vetically thinly sliced and deep fry it in vegetable oil. When it turns golden brown keep it aside.
  3. For marinationTake cheese slices in a bowl add salt, 2 -3 spoon curd, 1/4 tbs turmeric powder, 1/4 tbs kasoori methi mix all ingredients well and keep it aside for half an hour.
  4. Boil soaked rice in a pan, take water and boil it now add soaked rice, 1 tbs salt, cumin seed 1/2 tbs' 1 bay leaf, 2 cloves and 1 small piece, 1 small piece cinnamon and boil it until it cooked 85%.
  5. Remove pan from heat and drain rice in a colander. You may add a teaspoon of ghee to the rice. Set aside..
  6. Take a big pan with heavy bottom add 3-4 tbs oil add bay leaf,green cardamom' 2 cloves, small cinnamon piece, cumin seeds, asafoetida and saute it well untill it becomes aromatic.
  7. Now add ginger garlic paste, chopped onion and saute it well untill it turns golden brown.
  8. Now add all vegetables and saute it and you can also add soya chunks and fry it well now add tomatoes, mint leaves, coriander leaves and saute it until it turns aromatic now add curd in it..
  9. Add all the spices and mix it well add barista fried onion in it and again mix well.
  10. Now add drained rice spread it evenly now add marinated cheese pieces and spread another layer of rice and lemon juice and desi ghee on side of the pot.
  11. Now cover the pot with wet cloth and after that with a lid and do the flame slow..
  12. Cook it for 5 mins in steam at a low flame.
  13. Check whether rice are properly cooked. If yes than fluff up the biryani with the serving spoon gently..
  14. Serve hot biryani to your family..

I have used potato, cauliflower, beans and carrots. You can use green peas, mushrooms or even paneer would be a good addition. Spices: aromatic and exotic spices (both whole and ground) are a must for a good biryani. This veg biryani can be made in a regular pot, traditional pressure cooker or even in a Instant pot.
