  7. Provide for Oil to fry.

Heat oil in a frying pan, then fry the marinated pumpkin pieces in batches till golden brown. Remove from the oil using a slotted spoon and fry the next batch. When all the pumpkins are fried, remove excess oil from the pan, if any. Any vegetable that is shallow or deep fried with basic minimum masalas is called as bhaja.





Bhaja (Brinjal Fry, pumpkin fry, pointed gourd) process:

  1. Cut the Vegetables as shown in the picture..
  2. Cover the chopped veggies with chilli powder, salt and turmeric powder..
  3. Take some oil in a frying Pan, heat it and fry the veggies from both the sides at 120 degree centigrade with the lead closed till it turns golden brown..
  4. Fry properly from both the sides. Closed lead helps the veggies to be crispy from outside and soft from inside..

It can be patol bhaja (pointed gourd), baingan bhaja, aloo bhaja, pumpkin bhaja or bitter gourd or any such vegetable. Even vegetables like, plantain (raw banana), onion, okra can be deep of shallow fried with spices to make bhaja. Take brinjal slices in a bowl, add salt, turmeric powder, chilli powder and mix well. Heat mustard oil in a pan, pan fry brinjal pieces till golden brown. If you want crispy brinjal, add some rice flour to the brinjal and then fry.
