Ingredients requirements - Carrot Spicy Kanji:

  1. Prepare 1/2 Kg Red Carrots peeled,washed,and cut into long batons.
  2. Provide 1/2 kg - black carrots peeled, washed, and cut into two inch long batons.
  3. Prepare 2 litres for water.
  4. Require 3 tablespoons of mustard seeds (rai) roughly grounded.
  5. Prepare 1 teaspoon - red chilli powder optional.
  6. Need 1 tablespoon for rock salt or according to taste.
  7. You need 1/4 teaspoon asafoetida.
  8. Provide 1 tsp cumin seeds powder.

I call it the 'love hate drink' coz it has a strong spicy. Dice carrots. the size will depend on your liking. I like to keep small pieces which are easy to eat. Mustard powder, black salt, asafoetida and chili powder are added in the water.

  1. Take a big neutral jar such as glass jar, clean it and sterilize..
  2. Boil water in a big pot. When the water starts boiling, switch off the gas. Add carrot batons, and spices to it. Allow this mixture to cool..
  3. Pour this kanji mixture in a sanitized jar, and close the lid tightly. Keep the jar in sunlight. If sufficient sunlight is not there, then keep it at a warm place, and allow it to ferment..
  4. Taste a bit of kanji using a clean spoon. When the kanji turns sour, it is ready for consumption. The time required for kanji to turn sour depends upon weather conditions. In warm climate, it turns sour in two-three days, whereas in cold weather it may take up to ten days. Nowadays it took me more than ten days to get fermented..
  5. Once the kanji is fermented store it inside. It stays good at room temperature for about a weak. If kept in the refrigerator, it stays good for a month..

Kanji kept in sunlight to ferment. If black carrot is not available, red carrot can also be used. In fact in my childhood we lived in different parts of India, where black carrot was not available, and my mother used to prepare kanji with red carrots, and sometimes also added other vegetables such as turnip, cauliflower, and radish.
